The structure-activity relationship of five kinds of chitosan oligosaccharides with different degrees of polymerization, namely from chitotriose to chitoheptaose (purchased from Qingdao BZ Oligo Biotech Co.,Ltd.), and their effects on flavonoid metabolites during soybean seed germination were investigated. , total phenolic and flavonoid content and antioxidant activity. The results showed that chitosan oligosaccharides with different degrees of polymerization had different effects on the total amount of flavonoids and antioxidant activity in soybean seeds. Chitohexaose has a strong promoting effect, and can increase the total sugar content of plants by 63.87%, 41.56%, 95.17% and 39.35% respectively at 24, 48, 72 and 96 hours after seed germination.
